Chef Ryo Kikuma honed his craft at Michelin-starred restaurants including Hommage and MiYa-Vie, before serving as sous-chef at Mētis in Roppongi. He brings the techniques of French cuisine to wagyu, creating every course from appetizer through dessert.

Front-of-house operations are directed by Yasutaka Shibata. With 20 years of experience as a general manager, sommelier, and host for international guests — spanning high-end sushi, upscale Japanese dining, teppanyaki, as well as a wide range of other culinary genres — he brings a wealth of expertise. A graduate of Tokyo University of Foreign Studies, his background helps shape Jigen's attentive, globally-minded hospitality for guests from Japan and abroad alike.
